1 cup King Arthur pancake mix
1/2 cup dairy-free margarine
1/4 cup regular sugar
1/4 cup brown sugar
or 3/4 of a cup all allulose
2 tbsp. molasses
1/3 cup raisins
1/4 of a banana
1/2 cup peanut butter
3/4 of a cup oats gluten-free
1 to 2 large eggs
A wonderful light cookie that is soft. The King Arthur flour makes it really simple too.
Cream the butter and the sugars. If you want a more cake-like cookie use more eggs. If not, just use one. After creaming the butter, add about half of the King Arthur flour and then add the two eggs and combine. Add the peanut butter, banana and remaining ingredients and beat until well combined. Once this is done, put in the refrigerator overnight. The next day spoon out onto a baking sheet with an oven set at 350° for about 14 minutes. Take them out of the oven and let them cool for about 5 minutes and put on a wire rack to cool for about 10 minutes.
You can also add nuts to this if you'd like. I'm quite fond of raw cashews. As well as quick oats.p
